Responsiveness and efficiency.
I called Garage Coufleaux one evening, feeling a bit overwhelmed because I was having trouble starting my car. I got an appointment the next day at 9 a.m. to investigate the source of the problem (while another garage offered me an appointment two weeks later).
My battery was changed in less time than it took me to write this message! Breathtaking responsiveness and incredible efficiency.

For general mechanical work, they're fine, but don't ask them to diagnose or repair anything more specific. It will lead to exorbitant prices or a paid estimate with a very random series of repairs, leaving you wondering what will happen next—so it's not really an estimate at all.
Until now, I've taken two of my vehicles in for servicing. On one of them, they made three mistakes, giving outrageous estimates without actually fixing the problem. So I didn't go ahead with the work and found another solution.
I have very little confidence in their problem-solving skills, and I'll be going to other mechanics in the future. Now, I'll leave you to judge for yourselves.
